Recipe of the Month!
A Note from your Membership Director:Recently I did a complete overhaul of my refrigerator and pantry to make way for a much a healthier diet. I don’t care much for the word ‘diet’ since it usually implies eating less, which, although attempted, has never been a success with me. But until there is another word created, I will have to stick with ‘diet’ when referring to what I eat.
I have tried many recipes from Hungry Girl (no, this isn’t just a website for women!) and have been pleasantly surprised with most dishes (who knew onion rings could taste so good with Fiber-One coating and baked in the oven?!) Last night, I tried THIS RECIPE from Hungry Girl for dinner. I made this recipe for two, so I just doubled the amount for each ingredient. I also suggest adding a protein to this recipe. We sauteed a half a pound of shrimp in extra virgin olive oil and garlic to put on top after the Ratatouille Pack. Chicken would also be a great addition! Enjoy!
